This week saw the passing of a true icon of the Melbourne food industry; vale Vlado Gregurek, the owner and chef at Vlado's Restaurant in Richmond for over four decades. Vlado personally manned the grill right up until the end of last year, and we spent a few minutes reflecting on the dining experience he created. Importantly, the restaurant isn't going anywhere - drop in for a steak and keep the tradition continuing well into the future. Winter makes you feel like comfort food, and for many comfort food means roasts. We spoke to Tony Twitchett from Taxi Dining Room and Daniel Wilson from Huxtable about their favourite roasts, the politics of meat thermometers, and how the best roasts can only be created with the best source ingredients. Both chefs are joining in this year's Melbourne Food and Wine Festival Winter Roast Collection. Brave the cold this winter, and check out the many events on offer to warm your soul. Lastly we chatted to Mark Jensen from acclaimed Sydney restaurant Red Lantern - now about to celebrate its ten year anniversary. Along with co-owner Luke Nguyen, Mark has been at the forefront of vietnamese cuisine in Australia's restaurant industry, and we spoke about what the key flavours you'll find at Red Lantern, the differences between Vietnamese and Thai food, restaurant sustainability, and the need to verify the provenence of food... cheap wagyu, anyone? |
