Eat It - 15 July 2012

On today's show we had a very quick chat with the lovely Michelle Curtis, who is involved in an upcoming event called Food for Life at Leonda; could be worth checking out if you feel like both sampling and listening to a discussion on good food.

The Executive Chef at The Point restaurant Justin Wise joined us in our Brunswick container, and we briefly touched on how you judge the quality of beef in a competition setting (answer: you eat rather a lot of it). We spoke about August Escoffier, and how his early 20th century writings defined then-modern food for a generation of chefs. We also spoke about the importance of correct technique, a chef's need to balance creativity with authority in the kitchen, and how to make a cracking consomme (recipe below).

We also caught up with St Ali's Matt Perger, who has recently returned from Vienna where he won coffee's World Brewer's Cup Championship with a pourover drink made from beans roasted in South Melbourne. He's come a long way from making dud cappucinos at the Donald Bradman Museum cafe, and we spoke about what makes a good coffee, the importance of the water used, and some tips on how to make a great coffee at home.
